Ingredients

  • 100g Corn
  • 160g Tuna in Water
  • 1 Red Onion
  • 2 Tomato
  • 40g Mayonaise
  • 2x Baguette
  • 50g Cheddar, Belegen or Mix
  • 40g Mesclun
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tbsp Black Balsamic Vinegar
  • 2 tsp Mustard

Method

Step 1

Preheat the oven to 220 degrees. Drain the corn and weigh. Also drain the tuna. Chop the red onion and cut the tomato into cubes.

Step 2

In a bowl, mix the tuna with the corn, mayonnaise, half of the tomato and half of the red onion. Season with salt and pepper. Cut the buns in half and place them on a baking tray lined with baking paper. Top with the tuna salad. Divide the grated cheese over the tuna melts and bake in the oven for 6-8 minutes.

Step 3

In a salad bowl, make a dressing of the olive oil with balsamic vinegar, pepper, salt and 1 tsp mustard per person. Mix the rest of the red onion and tomato with the dressing. Just before serving, mix the mesclun with the dressing.

Step 4

Divide the tuna melts among the plates. Serve with the salad.
