Ingredients

  • 2 Flammkuchen
  • 1 Red Onion
  • 60g Rucola
  • 2 Roma Tomato
  • 1 Courgette
  • 200g Halloumi
  • 1 tbsp Olive Oil
  • 1 tbsp Extra Virgin Olive Oil
  • 1 tsp White wine vinegar
  • 0.5 tbsp Red Balsamico

Method

Step 1

Preheat the oven to 200 degrees. Cut the red onion into thin half rings and the courgette into thin half moons. Grate the halloumi with a coarse grater.

Step 2

Place the flammkuchen on a baking tray with baking paper and bake in the oven for 5 minutes. Heat 1/2 tbsp olive oil per person in a frying pan over medium to high heat. Bake the red onion and zucchini for 8-10 minutes. Season with salt and pepper. Cut the tomato into small cubes and set aside.

Step 3

Divide the grated halloumi over the flammkuchen. Bake the flammkuchen in the oven for another 8 – 10 minutes, or until the halloumi starts to colour. Meanwhile, in a salad bowl, mix 1/2 tsp white wine vinegar and 1/2 tbsp extra virgin olive oil per person. Mix the arugula and the diced tomatoes through the dressing and season with salt and pepper.

Step 4

Divide the red onion and zucchini over the flammkuchen. Garnish the flammkuchen with the balsamic cream and some of the arugula salad. Place the remaining arugula next to the flammkuchen before serving.
