Prepare 2 cups of chicken broth. Chop the cucumber and sun-dried tomatoes. Cook the chicken and cut them into bite-sized pieces. Place chicken stock in a saucepan and bring to a boil. Stir in the couscous, then remove the pan from the heat and cover for 5 minutes. Fluff couscous with a fork, then let it cool for 10 minutes. Combine 4/10th of a cup of olive oil with the lemon juice and 1 tablespoon of the vinegar. Mix until it thickets. Stir in some rosemary, season with salt and pepper. Combine the chicken, cucumber and tomatoes in a bowl. Stir in the couscous. Crumble in the feta and add parsley. Stir in the dressing, then season with salt and pepper.Ingredients
