Breaded sesame chicken with spicy broccoli

Ingredients

  • 500g Red Potatoes
  • 300g Broccoli
  • 1 Garlic
  • 1 Onion
  • 10ml Soy Sauce
  • 20g Sesame Seed
  • 20g Panko
  • 200g Chicken Filet Haasjes
  • 50g Mayonaise
  • 1/2 tsp Sambal
  • 2 tsp White Wine Vinegar
  • 4 tbsp Olive Oil

Method

Step 1

Preheat the oven to 200 degrees. Bring plenty of water to the boil in a pan with a lid for the potatoes. Peel or wash the potatoes thoroughly and cut into large pieces. Boil the potatoes for 12-15 minutes. Then drain and leave to steam without a lid.

Step 2

Meanwhile, cut the flower of the broccoli into small florets and the stem into small cubes. Make sure the broccoli is just covered with water in another pan with a lid, bring to the boil covered and let it simmer for 2 - 3 minutes. Then drain and rinse with cold water so that the broccoli does not cook any further.

Step 3

Meanwhile, press the garlic or finely chop and chop the onion. In a bowl, make a dressing of soy sauce, sambal and white wine vinegar. Add the garlic and onion and season with salt and pepper.

Step 4

Grab 2 deep plates. Add 1 tbsp olive oil per person and a pinch of salt to one of the plates. Mix the sesame seeds with the panko in the second plate. Dip the chicken in the olive oil and then in the sesame panko mixture.

Step 5

Heat 1/2 tbsp olive oil per person in a frying pan over medium heat. Fry the chicken for 2 minutes per side, or until the chicken is golden brown. Place the chicken on a baking tray lined with parchment paper and bake the chicken in the oven for 6-8 minutes. Clean the frying pan and reheat 1/2 tbsp olive oil per person over medium heat. Add the par-cooked broccoli and half of the dressing and stir-fry for 3-5 minutes.

Step 6

Mix the remaining dressing and the mayonnaise through the potatoes and season with salt and pepper. Divide the potato salad and broccoli among the plates. Serve with the breaded sesame chicken.
