Ingredients

  • 170g Pearl Couscous
  • 100g Spinach
  • 50g Sour Cream
  • 20g Walnuts
  • 1/2 Cucumber
  • 1 Avocado
  • Basil
  • 50g White Cheese
  • 160g Salmon Snippers / Smoked Salmon
  • 1 tbsp Extra Virgin Olive Oil

Method

Step 1

Bring 300 ml of water per person to the boil in a saucepan with a lid. Add the pearl couscous and cook for 12 minutes. Drain if necessary.

Step 2

In a tall bowl, mix half of the spinach with the sour cream and walnut pieces. Add 1/2 tbsp extra virgin olive oil per person and season with pepper. Puree with a stick blender until smooth.

Step 3

Cut the cucumber into cubes Cut the avocado in half, remove the pit and peel and cut the flesh into small cubes. Cut the fresh basil into strips. Crumble the white cheese

Step 4

Mix the pearl couscous with the spinach cream, the remaining spinach and the cucumber. Garnish with the salmon chips, avocado, basil and white cheese.
