Ingredients

  • Couscous (280 grams)
  • Lemon Juice (1/8th of a cup)
  • 1 Cucumber
  • Sun-dried tomatoes (1 jar)
  • Feta Cheese (1 block)
  • 2 Chicken Breasts (+-300g)
  • Chicken Broth (2 cups, 1 big jar)
  • White Balsamic Vinegar
  • Rosemary
  • Parsley
 

Method

Step 1

Prepare 2 cups of chicken broth.

Step 2

Chop the cucumber and sun-dried tomatoes.

Step 3

Cook the chicken and cut them into bite-sized pieces.

Step 4

Place chicken stock in a saucepan and bring to a boil. Stir in the couscous, then remove the pan from the heat and cover for 5 minutes.

Step 5

Fluff couscous with a fork, then let it cool for 10 minutes.

Step 6

Combine 4/10th of a cup of olive oil with the lemon juice and 1 tablespoon of the vinegar. Mix until it thickets. Stir in some rosemary, season with salt and pepper.

Step 7

Combine the chicken, cucumber and tomatoes in a bowl. Stir in the couscous. Crumble in the feta and add parsley. Stir in the dressing, then season with salt and pepper.
