Bacon Potato Soup

Ingredients

  • 1kg Potatoes
  • Sour Cream
  • 250g Bacon
  • 1 onion
  • 2 garlic cloves
  • low sodium bouillon block
  • oregano
 

Method

Step 1

Press the garlic.

Step 2

Chop the onion.

Step 3

Cook and crumble the bacon.

Step 4

Dice the potatoes into big cubes.

Step 5

Heat a tablespoon of oil in a large saucepan. Add the onion and garlic, cook for about 4 minutes.

Step 6

Add the potatoes and cook for 2 more minutes.

Step 7

Add 1.2liters of water (6 cups) with as many bouillon blocks as needed.

Step 8

Boil for 20 minutes.

Step 9

Remove 1 cup of potato and set aside.

Step 10

Remove soup from heat, then add 1/4th of a cup of sour cream. Blend the soup until smooth, then season with pepper and oregano.

Step 11

Divide the potato between serving bowls, top with soup and sprinkle in bacon.
